I love love to cook. LOVE It! I am always looking for a new recipe to try out. But it seems as of late I just don't have the time to give to cooking like I did a year ago. It's making me sad. I know what the deal is, I have an extra little person around and my husband is in school 4 nights out of the week (Mon-Thurs), he's gone from about 5ish to around 8:45. He's not even there to enjoy the hit and misses I make. But soon it will be over, woohoo! He Graduates December 19th!!! So here is a list of recipes I'll be making now that it's almost over. Oh and I have a thing for Ina Garten.

On Tuesdays we have Gymnastics from 4pm to 7pm. We are not home to cook. I have to give the girls a snack as we are heading out the door and them feed them dinner once home. So on those nights we do either crock pot dinners or casseroles. One of my favorite casseroles I got off the Jim Bob and Michelle Duggar website. Since my mom is one of 11 I have a fondness for super large families. I love em. It makes me feel welcome and at ease. My cousin Amy might feel the same or different since her house is where we all gather. But none the less I understand the HUGE family in a way most don't.
Tater tot casserole, I cut this recipe in half to feed my family of 5. It is really really good!
Crockpot BBQ, we love BBQ, but only PORK! We are in Memphis. I serve this with slaw, baked beans, deviled eggs and a salad.
I also do lots of red sauce type things because I can make it ahead then keep it warm in the slow cooker and chili too. So anywho, I'm sure I'll make another more interesting post later. My WONDERFUL husband took my oldest child to a birthday party this am, God Bless that man! The party started at 8:45 at the Zoo in the city. WHAT! That means they had to leave at 8:15, yuck!

I love real chicken pot pies (not the $.99 store bought little things with the doughy crust - HATE those). Might have to give Ina's a try.
Yes I still want the recipe. The last time I remember it being made was when grandma lived across the street from Aunt Eileen. She was toasting the ramon noodles. Thank you!!!
Tamar, This is a recipe for Japanese Fruit Pie, Mom used to make it for Shane....Although he called it Japanese "PUCK" Pie just to hear her say,"damn it Shane, it is Japanese Fruit Pie...get it right". 1 9" unbaked pie shell,2 eggs, 1/3 cup butter melted,1 cup white sugar,1 tsp vanilla,1 tablespoon white vinegar, 1/2 cup pecans,coconut,raisins preheat 350, mix eggs,butter,sugar, vanilla,and vinegar. beat until smooth. Stir in pecans,coconut,raisins...bake for 40min...cool before serving. I don't care who you are....you'll love this pie.Frankie
